Buffalo Chicken Lettuce Wraps

I made a slow cooker’s worth of buffalo chicken earlier this week to have for nachos, dinners, healthier snacks, etc. when Kev or I wanted a quick bite. So, I started to get creative with ways to use the leftover meat. Give my affinity for literally anything in wrap form, buffalo chicken lettuce wraps were a no-brainer.

Buffalo Chicken Lettuce Wrap Recipe

We’ve not been eating the best around here lately. The holidays have really taken their toll on our schedules, which has subsequently hit our eating habits. I’m meeting up with a friend later but there’s no way I can make it from breakfast to a late dinner without some sustenance. So, I figured I may as well make this next snack the first step to making smarter food choices.

Buffalo Chicken Lettuce Wraps Recipe

Yields ~4 Buffalo Chicken Boats

  • 2 boneless, skinless chicken breasts (I stock up on Perdue 10 lb bags from Costco)
  • 1/4 cup Buffalo sauce, Frank’s has an awesome pre-made option
  • Lettuce, I used Romaine heart leaves for the longer length
  • 1/4 cup shredded cheese
  • 1/8 cup crushed tortilla chips
  • 1/8 cup finely diced red pepper

Cooking the Buffalo Chicken

Cook the boneless, skinless chicken breasts on low for about four hours in your slow cooker (we absolutely love ours). Keep an eye on the chicken and add small amounts of water as needed (literally just spoonfuls at a time) so that it stays moist enough to shred with a fork when cooked. If it overcooks it will dry out and be a lot harder to shred, not to mention tougher to the taste.

Once the chicken is done, shred it with a fork right in the slow cooker, then pour in the buffalo sauce. Let the chicken and sauce sit for a few minutes on the ‘keep warm’ setting.

Assembling the Buffalo Chicken Lettuce Wraps

Take one leaf off of the Romaine heart for every boat you plan to make. Fill the lettuce with the buffalo chicken first, then the cheese, the crushed chips, and top with the red peppers. That’s it! Enjoy yourself an easy, delicious and pretty-good-for-you snack.
