Recently, we had my in-laws over to try a new recipe I found, Spinach Skillet Lasagna. It cooks in one pan, not a ton of ingredients, and yielded more than even the four of us could finish.
This recipe was from an All Recipes magazine circa September 2017 and it was AWESOME! I’ve never made a ‘skillet lasagna’ before. I didn’t even know it existed, so this was a welcome challenge. My take is just a slight deviation from the original magazine clipping with similar items I already had home.
Spinach Skillet Lasagna Ingredients
These amounts yield 5-6 adult servings.
- 1 lb ground Italian sausage (I used turkey for a healthier option)
- 8 lasagna noodles, uncooked and broken into pieces
- 2 cups raw spinach, washed
- 28 oz can crushed tomatoes
- 8 oz can tomato paste
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/2 cup ricotta cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
One thing I’ll say is the finished product definitely looks a little more messy than the magazine’s photo, but thankfully you taste with your mouth, not your eyes. 🙂 Don’t let the sloppier end product make you feel like it wasn’t a success because ours was SO, SO good!
Cooking a Spinach Skillet Lasagna
1. Add ~2 tbsp olive oil to your cast iron skillet (if using a regular pan you can substitute with cooking spray) and start by adding the Italian sausage on medium-high heat until browned (about 7-10 minutes).
2. Once meat is cooked, drain any grease. Replace meat back in pan and add the broken up lasagna noodles. Top with the crushed tomatoes and tomato paste.
3. Stir sauce, noodles and meat well, bringing to a boil. Reduce heat and simmer, stirring occasionally. Cover if able (I waas not with my cast iron and it was fine).
4. Stir in spinach, waiting 1-2 minutes to allow spinach to wilt slightly, then stir in ricotta, mozzarella, salt and pepper. Finally, sprinkle parmesan over skillet.
I served my lasagna with 2 loaves of fresh garlic bread from our local supermarket. It was the perfect complement to the skillet lasagna!
