The one fish, one side combo is one of my favorite go-to healthy meals. I can’t stress enough how beneficial buying fresh fish in bulk at Costco has been to our healthy diets. Convenience is a huge reason why eating healthy gets passed up in our household. Not with this quick fish dish though, you can have a well-rounded meal every night with this winning combination!
Today, I made tilapia with garlic salt and Parmesan cheese and for my side, a pound of pre-snapped green beans.
Quick Fish Dish Ingredients
- Two tilapia flanks
- 1/2 cup of Parmesan cheese
- Garlic salt
- 1 pound green beans
- 1/4 cup yellow onion
Preparing Your Quick Fish Dish
First, pre heat your oven to 350 degrees. While the oven pre heats, pat your tilapia dry and add garlic salt and Parmesan cheese to taste. Place the prepared flanks on a greased cooking sheet and wait for the oven to be ready.
Next, you can soak your green beans in ice cold water while you dice your onion.
Pro Tip: Dump your green beans in a bowl of cold water before taking the dog for a walk (or whatever your after work routine looks like). You can soak the green beans up to an hour or two before dinner prep starts if that works for your schedule!
Next up you’ll dry and season the green beans. I topped with seasoned salt and garlic salt and cooked with 1/4 chopped yellow onion. Meanwhile, the fish was cooking and finished up right around when the green beans were ready. Perfect timing!
Kevin and I have fish three to four nights a week; it’s no secret how good it is for you. He’s been asked at work if he’s lost weight and immediately credits the “delicious fish dinners that Ashley makes” (the ultimate compliment). It’s one thing to make a good meal, but it’s another for it to lead to healthy weight loss.
