If you love a delicious baked potato with dinner, you really should try one with breakfast sometime. Easy to personalize, my simple loaded breakfast potatoes recipe is a tasty, filling easy to make and meal prep friendly meal idea.
The ingredients are simple, you may even find you have most of them home already.
Loaded Breakfast Potatoes Ingredients
Yields 2-3 adult servings.
- 1 lb bag of southwestern style hash brown potatoes
- Shredded cheese (I used a fiesta blend)
- 6 large eggs
- Milk and butter/margarine
- Green onion, chopped
- Seasoned salt (can sub in regular salt)
- Chipotle-flavored Cholula or other hot sauce (optional)
Prep and Cooking Loaded Breakfast Potatoes
1. Start your potatoes on medium heat in a large pan or wok because this part takes the longest. Use cooking spray or a splash of extra virgin olive oil to keep them from burning or sticking. Season with seasoned salt to taste (alternatively, you can use regular salt).
2. Next, add chopped green onion into the frying potatoes to taste.
3. While the potatoes cook, crack 6* eggs in a mixing bowl, then add 1/4 cup of milk and 1 tbsp of butter/margarine. The butter/margarine and milk are Kevin’s trick to making your scrambled eggs much fluffier. Add the egg mixture to a medium pan on low heat.
*I allow only about 3 yolks in to the mixture for a lower cholesterol dish
4. Then, stir potatoes occasionally, making sure they crisp evenly. Add more cooking spray and/or seasoned salt if desired as they cook. Total potato cook time is about 15 minutes.
5. Once eggs and potatoes are done, you’ll first plate the potatoes, then the eggs, cheese, sour cream and additional green onion for garnish to taste.
Bonus: If you love a little heat with your eggs, add chipotle-flavored Cholula or another hot sauce like I do!
