Bagel Thin and Egg On the Go Breakfast

Love sneaking egg into your daily diet but don’t have time to cook every morning? Or maybe you just want to eat better without spending a fortune every day? Healthy breakfast meal prep is much more accessible than you think. It takes a little ingenuity but it’s more than doable to take a nice healthy egg on the go.

I struggle to find cleaner, simpler, reasonably cost-effective breakfast options. No one wants to eat the same thing everyday, but buying different breakfast sandwiches each morning gets costly, for both your wallet and your waist.

I’ve gotten creative with my at-work breakfasts because I don’t want my hard earned money gone before lunch. Starting my day with a clean and delicious meal is when I feel my best. While that means something different for each person, this works for me and might work for you, too.

Simply, it’s a sleeve of bagel things, cream cheese (bonus points for low fat versions) and hard boiled eggs.

Healthy Breakfast Meal Ingredients

Three simple ingredients will bring you an easy and nutritious morning meal all week.

Boil at least 5 eggs once a week (I prep on Sunday) and keep them grab-and-go ready in the fridge. If you elect to leave them in the original carton be sure to mark the underside of the carton lid so you don’t accidentally bring a raw egg to work!

Pro Tip: Ever since I’ve gotten a Dash Egg Cooker I’ve only ever hard boiled my eggs this way. They cook perfectly every time and I swear they’ve never been easier to peel. I highly recommend you try it for yourself!

Smoked Salmon Cream Cheese

The cream cheese is also where you’re going to get the most variety, which is key to your diet. I’m a huge fan of the reduced fat kind, they even have a reduced fat garden veggie variety now.

Your egg is also going to stick to your bagel thin much easier with some cream cheese. So, while you can elect to replace that with avocado, jelly, etc. you may find your egg pieces rolling around.

Hard Boiled Egg Bagel Thin

Take your peeled hard boiled egg, break it up and add it to the top of your bagel thin. I have to admit it looks unconventional, but it’s practical, healthy, and so delish! For a more Insta-worthy looking final product you can grab yourself an egg slicer on your next grocery trip!

An Even Healthier Breakfast Option

To take it a step further in the clean eating, you could replace the cream cheese with an avocado. Avocado toast is obviously very hot, but I suggest this with caution. If you are anything like me, you need some sort of flavor or ‘reward’ to balance your good eating.

Healthy Breakfast Bagel Thin

If you aren’t a fan of how avocado tastes, it might steer you away from the healthier eating concept entirely. Everything but the bagel seasoning helps, but don’t deprive yourself of what you really want for a few calories. Indulge a little; cream cheese isn’t terrible for you in the ~2 tbsp moderation you’ll have in my recipe.

Also, the everything but the bagel seasoning is also amazing on cream cheese. It’s good on nearly everything!

  • Bagel things: $4.80
  • Cream cheese: $6.80 (includes both containers)
  • Eggs: $1.40 (whole carton)

Total: $13.00

Prices vary by area, brand, store, etc. but for ~2 weeks your breakfast can cost around $13 when done right. Buy a container of delicious creamer to sweeten the free office coffee most or all of the week, and you’re in real money-saving business!
