Yet another easy to prepare dinner? Why yes, yes it is. This simple, already-have-the-ingredients-home recipe is a real crowd-pleaser. Plus, I don’t know about you but I don’t have pesto nearly enough, and you can’t go wrong with staples like chicken and bow tie noodles in this pasta skillet recipe.
Throw in spinach for some greens, and delicious pesto and cheese for incredible taste. Prepare for rave reviews all around the table.
Ingredients for this Pasta Skillet Recipe
Below yields approximately four adult servings.
- Tyson® Grilled & Ready® Fully Cooked Grilled Chicken Breast Strips, 22 oz. (Frozen)
- 1 lb bow tie pasta
- 1 cup raw spinach
- 2 tbsp pesto
- 1/4 cup sour cream*
- 1/8 cup Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 tbsp butter or margarine
- 1/2 avocado
- Oregano and/or basil to taste (optional)
*Suggestion: Use a can of cream of mushroom soup instead of 1/4 cup of sour cream. I didn’t have any home at the time but plan to try this in the future and will update y’all on the outcome if/when I do!
FYI: I’ve also used these Tyson Chicken Strips that are also already cooked. Just like the ones I linked, I grill them in the large skillet that eventually held all of the meal to heat them. This eliminates an extra microwave dish or pan.
Skillet Cooking Directions
Cook the pasta as directed on the package. While the pasta is cooking, prepare a large skillet and further dice the chicken strips, placing in the skillet to begin heating. While the pasta and chicken are cooking you can begin preparing the sauce. The sauce will require the most attention and will be in its own sauce pan (you’ll have a large skillet, a medium sauce pan and a pot going at this point – you got this!).
Making the Pesto Sauce
On a low simmer, begin by adding the avocado in small chunks, allowing them time to start melting. Then combine the pesto, butter/margarine, Parmesan cheese, shredded mozzarella cheese and sour cream (or cream of mushroom soup if subbing) in a medium sauce pan and simmer on low. Keep heat low throughout and whisk ingredients often. Once well mixed and slightly bubbling it’s almost done.
Give it a taste and if you think it needs a little more flavor you can add oregano and/or basil. I didn’t add any extra but this can vary based on the pesto you use.
Combining the Pasta Skillet Ingredients
Combine your drained pasta with the chicken in the large skillet. Then add the spinach and pesto sauce once ready. Let it cook all together on a medium heat for a few minutes while you mix everything together.
Once the ingredients are mixed well your meal is ready to serve. Sprinkle additional mozzarella on top to-taste and serve!
